Berry Pickin’ Fun

Freshness at its Best!

There is nothing so fun as picking a mass of blackberries in the quietude of nature!!! If you find a big patch, can them, and your family will be enjoying them all year long! Our favorites are fresh blackberry jam, homemade blackberry pies, and fresh fruit parfaits (berries atop organic vanilla yogurt!)

Best Pizza in North America

My vote for best pizza in North America?? Hands down – Il Pizzaoilio in Mt. Lebanon, PA (south hills of Pittsburgh). Wood fired awesome!!! Their Wood Fired Margherita Pizzas and delectable Antipasta platters make a trip to Pittsburgh complete! I must say, after spending 11 years inPittsburgh, this quaint city tops my list for best eats all around!! So many good restaurants in this town – many located in Mt. Lebanon just south of the city.

Looking for a cheap but fun getaway? Take a short trip to Pittsburgh. There is so much to do you won’t be able to fit it all in on just one trip. On my list of things to do include a ride up Mt. Washington on the Duquesne Incline, a cruise on the Gateway Clipper, a visit to the zoo, Kennywood Park, or Sandcastle Waterpark If you have little ones I highly recommend a short trip to Somerset, PA to visit Idlewild Park and Storybook Forest This is a fun annual event for our family each year!! A trip to Pittsburgh isn’t complete without throwing in a professional sporting even for the man in your life – Pittsburgh is Steeler, Pirate and Penguin country after all!!! Looking for some quaint things to do? Check out The Pretzel Shop nestled at the bottom of the hill on Southside. Southside is a charming little community worth the walk at the bottom of Mt. Washington.  Also check out Primanti Bros. while there!! Also Primanti’s sandwiches aren’t the healthiest thing they sure are good – and a visit to Pgh is not complete without one!

Nothing quite like fresh herbs just outside your door as an added treat to summer freshness.  Just a few steps outside and you have fresh herbs to make even the simplest recipe a wee bit more delicious! Herb gardens can be as simple or as elaborate as you wish. Tailor to your liking!

Veggie Bean Burrito

One of my family’s top favorite meals of summer is Veggie Bean Burritos. Bowls galore of fresh garnishes including steamed rice, fresh lettuce, chopped organic (and home grown if possible!!) tomatoes, a variety of sprouts (home grown is best, and oh so fun!), peppers, ripe black olives, fresh minced garlic, red and green onions, and your favorite beans (try garbanzos, pintos and/or black), and of course lots of fresh shredded cheese! You can make your own fresh flour tortillias from scratch or deep fry corn tortillia flats (and layer with ingredienets) for a special homemade treat! Serve with extra tortilla chips if you like! Dollop with your favorite Salsa. Kids and grown ups alike enjoy making their own creations out of all these garnishes. I’ve found this is a great way to get your kids to eat fresh veggies and proteins! The fun bowls full of yummies are just too difficult for their little hands to resist!

Veggie Bean Burrito!

Yummy Potato Soup

I came across this recipe online at It was classified as the “World’s Best Potato Soup”. I don’t know if it’s the world’s best – that’s an awfully BIG claim to make! But it is a very good and easy recipe to make, and truly a delight to the taste buds : ) With just a few adjustments to the original, here it is.

8 unpeeled cubed potatoes

1/2 to 1 onion, chopped

4 stalks celery, chopped

6 cubes chicken bouillon

1 pint half-and-half

1 (10.75 oz) can condensed cream of mushroom soup

2 cups Shredded Cheddar cheese and 12-16 oz. bacon for crumbling on top before serving.


In large pot combine vegetables, bouillion cubes and enough water to cover ingredients. Bring to a boil and simmer on medium heat until potatoes are almost done. Add half-and-half and cream of mushroom soup, and stir until creamy; simmer on low until potaotes are done. Put in bowls and garnish with cheese and crumbled bacon. Can be kept in crock pot on warm if necessary.

Thai Coconut & Curry Carrot Soup

I came across this recipe a couple of weeks ago online. I have made a few minor adjustments – it’s divine! Although it is considered a soup, the thickness and taste is such that it would also make a great Thai sauce for a main dish. This is truly one of the best thai coconut curry sauces I’ve tasted!   

6 carrots, chopped

1/2 onion, chopped

1 tsp ginger

1 1/2 tsp curry powder

1 3/4 cup vegetable broth

1 14 ounce can coconut milk


Simmer all ingredients together (except coconut milk) for 20-25 minutes, until carrots are soft. Puree in food processor. Return to heat and stir in coconut milk until combined.

Roasted New Potato Salad

A friend recently made this salad for me. Let me start by saying I don’t like potato salad!!! But after eatting this dish, my tune has changed! A must try!!! I do not know where this recipe originated.

Place 2 T. olive oil in a 9×11 casserole dish. Toss 2 lbs. diced small red potatoes with 1/2 chopped sweet onion, 2 t. minced garlic, 1 t. coarse salt, and 1/2 t. pepper. Arrange in single layer and bake at 425 degrees for 30-35 mins. or until potatoes are tender, stirring occasionally. 

Transfer to large bowl, and toss with 8-10 slices of crumbled bacon, chopped green onions, and 3/4 c. of Ranch dressing. Serve immediately! And best of all – Enjoy!
